Some coffee’s are fermented prior to washing, but not all. Fermentation helps to loosen the fruit and mucilage that surrounds the seed (a.k.a bean) and it can also help develop flavors. This particular coffee was fermented with the addition of a selected wine yeast as an added catalyst to the fermentation process giving it a distinctive profile. At the wet mill the cherry is submerged in water for a controlled fermentation with the selected wine-yeasts. During the process various factors such as time, temperature and pH are meticulously controlled to guarantee the development of flavor. The coffee is then dried on raised beds for 12-15 days - covered in the high-noon hours when temperatures tend to climb in order to achieve uniformity. This process has been pioneered by Lucia Solis and the goal is to control the various factors that occur during fermentation to optimize flavor development.
