This coffee is fermented for 24/36 hours, meaning the coffee is first fermented in cherry for 24 hours and then de-pulped and fermented in the tank for an additional 36 hours. In Colombia, it is common to ferment in tanks with water, but this initial step of dry fermentation is an extra step that adds complexity to the cup. Audon was introduced to our importer Coffee Quest by another producer in Palermo, whom Coffee Quest has worked with for 2 years now. This is a great example of how the project in Santa Maria (see the La Victoria coffee bio) is attracting producers not only from Santa Maria, buy from nearby municipalities. This is Coffee Quest’s first year working with Audon and it is also his first year entering the specialty market.
